Long known for producing some of the best wines in Chablis, Domaine Billaud-Simon has been working for some time on convertion to organic production; 2022 was the first growing season using fully organic principles.
Clear and bright with a green tinge in the glass, the wine has a rich aroma of ripe citrus, apple, and just a hint of spice.
Clean and round on the palate with zesty citrus and green fruit dominant, while a pronounced minerality and slight oaky creaminess add balance and depth. An exceptionally long finish with citrus and mineral lingering to a crisp aftertaste. Will age well through 2030 and beyond.
Delicious with grilled white fish, spicy prawns, hard cheeses and goats cheese. A perfect wine to accompany sushi.
There is an excellent balance between rich, honeyed notes and very crisp, clean acidity. Stony edge to the finish.
