Cervaro della Sala vineyards are located high on rolling Umbrian hillsides, not far from Tuscany, with vines growing in ancient clay and calcareous soils rich in marine fossils, contributing to the mineral and aromatic nature of the wine.

The wine is a green tinged straw yellow color, with aromas of citrus and tropical fruit, butter, and hazelnut. Chardonnay gives its typical structure and elegance, while the small amount of Grechetto adds wonderful freshness and minerality. The result is a palate that is complex and refined, with mango and peach, roast hazelnuts, flint, and a hint of spice leading to a lingering and delicate finish defined by notes of tropical fruit.

Cervaro della Sala is deliberately crafted to produce a white wine that will age well. While excellent drinking now it will continue to evolve for a decade or more.

Pairs well with roast chicken, grilled or fried seafood, creamy risottos, and goat’s cheese.

This is pure elegance in the glass, as silken textures envelop the palate. A bump of residual acidity maintains energy throughout, even as the 2023 tapers off tannic and potent, with a resonance of mineral-infused apricots.
